I'm sure I'm not the only one with a boatload of green tomatoes at the end of the season, and I've had requests for a couple of recipes I've mentioned... I think I've posted these recipes before, but I can't find them, so this time I'm starting a thread for them. :-)
Green Tomato Chutney
I used the Apple Chutney recipe in Joy of Cooking as a guideline, but then I played with it a bit. Here are the ingredients and measures that I used. You can multiply them for a larger batch -- my notes don't say how many jars I got, but JoC says "about 6 pint jars" from a recipe using 4 cups of cider vinegar.
Stir together in a 4 qt nonreactive saucepan:
7 cups diced green tomatoes
1 1/2 cups cider vinegar
1 1/2 cups brown sugar
1 cup diced apple (peeled & seeded)
1 cup diced green pepper
1 1/4 cup golden raisens
1/2 cup finely diced candied ginger
1/2 tsp. galangal (a ginger-like spice)
1 tsp. cayenne or similar ground, dried hot peppers
2 tsp. red pepper flakes
2 tsp. orange zest
Simmer, partly covered, for a couple hours until thickened. Stir often to prevent scorching, especially toward the end.
Fill pint (or half pint) jars with the hot mixture, leaving 1/4 inch headspace. Seal with 2-piece caps and process 10 minutes in a boiling water bath.
