The American Horticultural Society Pruning and Training book by Christopher Brickell and David Joyce has a very good chapter on Espalier training of fruit trees. It is well illustrated and explain the formative years and pruning of established espaliers. I highly recommend this book. New, the book costs somewhwer between 40 and 50 dollars.
