I took out our 1980 flurescent ceiling light fixture. I am upgrading the counter surface, floor, and painting. Small kitchen. I will have a pendant light over the sink and a recessed light or 2 over the counter/eating area that has the stove on the other side. I want to put a hanging light in the middle and some of the lights I really like are described as "over the island". Those will work, won't they? We put up some track lighting last night and took it down this AM. too bright/glare in your eyes and the heat from the bulbs is too much.
The only thing I would watch out for is whether tall people will hit their head on them--the ones that are meant to go over islands sometimes hang down lower because they're over the island and nobody has to walk under them. For your track lights, could you use lower wattage bulbs? That might fix the problems with the glare & heat.
