OK, so I can plant the same genus side by side but not the same species. So I should be able to plant cucumbers next to cantaloup becasue they are the same genus but not the same species. If I do plant my hubbard (cucurbita maxima) next to my buttercup (Cucurbita maxima) the fruit this year will be fine but the next generation will not produce true from seed. Correct? Also, beets and swiss chard are the same genus and species. Do they cross pollinate? And I shouldn't plant my zuchini next to my delicata?

By George, I think you have gotten it. Yes Swiss Chard and beets will cross. These are biennials so you would would have to overwinter and grow out seed-heads on both in order for it happen. Even then if would be problematic as they are not dependent on insect pollination. Its the insect pollinated and windborne things like corn that are most highly prone to cross pollination.
