a few people on another forum asked for this recipe so here it is. this is enough for 11 people so you can reduce it accordingly.
11 boneless and skinless chicken breasts
2 scrambled eggs
plain breadcrumbs with salt and pepper, pinch of dried basil and some grated cheese added or buy flavored kind.
oil for frying
3 large onions cut into 1/4 inch dice
one and one half sticks of real butter
dip chicken breasts into the egg and then the breadcrumbs and cook over med high heat until the breasts are golden brown.
remove the chicken and clean the pan.
add the butter and when it melts add the onions and cook until the are golden brown but not dark brown.
place the chicken breasts into a baking dish large enough to hold them in one layer and then cover with the onions.
cook in a preheated oven at 350 degrees for about an hour or until chicken is tender and the onions are a dark brown. if onions begin to brown to quickly throw a sheet of foil over the dish.
