Seems every time I make strawberry jam (or other jams, for that matter), the strawberries all float to the top of the jar after processing. I know this is silly, but it bugs me that they are all at the top, and I'd rather have some chunks and some jelly together, than all chunks in the top half, and all jelly in the bottom. Any suggestions, other than just stir it when I open it?
Been a strawberry processing fiend today:
Froze 8-3.5 cup containers of sugared strawberries
Froze 4-freezer boxes of strawberries with syrup (wish I'd done more this way)
Made 8 half-pints of strawberry/rhubarb jam
Made 6 pints and 14 half-pints of strawberry jam.
Also gave away bowls full of berries to all our neighbors, because I just didn't think we'd use that much jam or frozen berries in a year! Next time we'll be a little more realistic at the U-pick place. I still have strawberry-rhubarb jam from last year! Thought it was all gone, until I started hunting for empty jars and found a box with more jam. Yummy! Not complaining!
