My Mom made 2 of these for me to bring to the North East RU @ Kassia's home on June 28, 2008.
She used pecans in one & walnuts in the other.
It's an easy cake to make, no mixer involved.
Just mix everything in one bowl.
Everyone seems to enjoy it.
I don't eat it 'cuz I don't like nuts or coconut. LOL!

Hummingbird Cake
3 c. all-purpose flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs beaten
1-1/2 c. vegetable oil
1-1/2 tsp. vanilla extract
1 (8 oz.) can crushed pineapple, undrained
1 c. chopped pecans
2 c. mashed banana
3-oz tin of flaked coconut
Combine flour, baking soda, salt, sugar and cinnamon in a large bowl.
Add eggs and oil, stirring just until dry ingredients are moistened. Do not beat.
Stir in vanilla, pineapple, pecans, banana and coconut.
Pour batter into a 9x13 pan or 3 greased and floured 9” round cake pans.*
Bake at 350 degrees for 30 or 35 minutes or until cake tester comes out clean. Cool in pans 10 minutes, then let cool completely on wire rack.
*If making a layer cake, spread frosting between layers and on top and sides of cake.
Cream Cheese Frosting
1 (8 oz.) pkg. cream cheese, softened
1/3 c. butter or margarine, softened
1 c. chopped pecans
1 (16 oz.) pkg. confectioners sugar, sifted
2 tsp. vanilla extract
Combine cream cheese and butter beating until smooth. Add powdered sugar and vanilla until light and fluffy. Stir in pecans.
