My lettuces were wonderful, I went on vacation, came back a few weeks later, and the plants became 2 to 3 feet tall.
Should I take them out or prune them?

Pull them. They will be bitter and inedible now.

Taste them, and if you like them, eat them. Some people don't mind the bitter taste. If they are not to your liking then pull them.
