    Well done! Thoroughly explained and pictured. It sure would be nice to have summer squash available off season without the off-season price at the big food store.

    Great article! I loved the explanation about blanching... I knew I had to do it, but never knew why it did what it did. :-)

    I wish I had neighbors with too much squash. Thanks to rampant squash vine borers out back, I have to get my summer squash at the farmer's market. That works, but I seldom end up with extra for the freezer!

    Great article. I thought I would share an idea I got from a magazine years ago that described blanching in the microwave. You just add about a tablespoon of water and microwave about 4 minutes. Then cool in ice water. After spending decades doing it with boiling water I really like the microwave method. It is faster and keeps the kitchen and the cook cooler. ; )
