My bounty of summer squash this year is making it hard to be creative :) Maybe the right thing is tried and true, not creativity! I have made squash puree for later additions to soups, and it tastes good on it's own too (better when it's cooler I think though).
Thanks for the recipe, never thought of adding a white sauce; I always learn something new here :)
So I FINALLY learned about blanching! And I got The Joy of Cooking for my tenth birthday, but I just didn't read the parts about blanching. Thank you, Mel, I too learned something new and worthwhile! Great article.
Hi, Melody. Squash are among my favorite vegetables, but my youngest son (grown up now and about to become a dad himself) wrote a half-page essay for his 3rd grade English class on how bad squash were. To this day, I think of that paper whenever I cook or eat squash.
A few of my excess squash are going to be hitting the freezer today. Thanks for the timely article and for the casserole recipe. It's going to taste real good this winter.

Great article, very motivating...just made and ate a goodly portion of squash casserole. After awhile I just can't face another steamed or sautee' plate of squash.
