    The okra flowers are entrancing. I learned early on when I started to cook okra myself that if you don't stir the okra while cooking it stays crisp and in fact does well in stir frys. My favorite is to dehydrate the okra while it is whole and young. Its a great snack and crispy-nutty too.

    The article didn't emphasize that the way to cut the slime and enjoy the nice flavor of okra is too cook it with acid. That's why it is so good with tomatoes - the tomatoes cut out the slime. I've served okra like that to people who absolutely hate it and they raved about how good it was.

    I'm trying a smallish red okra this year but it has yet to flower.

    i didn't know about using acid to cut the slime of okra. I usually just steam and that method is not slimey.

    Red okra has an extra nutty flavor. I like it the best!

    Thanks Melody for a review of such a basic Southern vegetable. (Never ate it until I came South--nor grits either!).
