My cilantro plant bolted and now I have little coriander seeds :). How long do I wait to harvest them? Should they be brown/dry?

Yes, I always wait until the seeds are dry and crunchy to the touch. They will simply fall off of the plant. I store them in glass jars. I always allow a few to drop to the ground as well because, at least in my zone, cilantro grows best from its own seed.
