Yikes, it seems that I got behind on my harvesting and found several VERY LARGE pickling cucumbers hiding in the garden today. Any special tips on how to handle these, or just go ahead and slice / pickle as usual (much you would a dill pickle)?

If they are quite mature, you'll need to peel them (if you can't easily pierce the skin with your fingernail, it'll be tougher than you'll want to eat). The seeds may be large and getting hard, too... you can cut them in half or quarter them lengthwise and just scoop the seeds out with a spoon, then slice/dice the remaining flesh and use for whatever you like.

Jill, thanks for the great article, and this link as well. I'm saving the both recipes. The cukes are piling up here LOL I think it's time to buy a mandoline. I got one for my DDIL but I don't have one yet.

My mandoline is an Oxo (one of the highly recommended brands when our local paper did a review/comparison), and I just love it. I had a cheap v-slicer previously, and it just doesn't compare!
