I googled polyacrylate and found a lot of information I really don't have the expertise to evaluate. However, as does any synthetic chemical, it can contain harmful impurities and can break down in the soil. The disturbing thing is always that there is "no information" about ecotoxicity--and we know that often the chemical companies don't want to study such questions because if they find a problem they are doing themselves in. I assume the moisture crystals are the same substance that is used in disposable diapers and many other medical and other settings--but we just don't really know if it is really safe. No one has yet started an alarmist discussion such as "disposable diapers cause autism" but the fact is that we just don't know what all they may or may not do.

I have used them in containers very successfully, but my personal decision has been not to use them to grow edibles, and not to purchase any further supplies of them.

I would be interested how others are dealing with these issues.

Disposable diapers contain a different form of polymer than moisture crystals. Diapers contain polyacrylate, and moisture crystals contain polyacrylamide.

Although I can't address the issue of impurities, I haven't found anything to make me question what I wrote in the article (based on several sources, agricultural studies as well as manufacturer's claims).

"In a few seasons, according to the manufacturer, they will break down harmlessly into nitrogen, carbon dioxide, and water. They are nontoxic and safe to use on food crops."

I welcome further discussion, because like anything you add to your garden, I think it's important to make an informed decision. And I'm not trying to claim ultimate authority, LOL... I learn something new every day here on DG.
