    How do I prune these for them to be their beautiful, full fans

    You can hack off the suckers all you want. As for trimming Strelitzia nicolia, most just cut the dead fronds off. They don't make nice fans, really.. you are probably thinking of Ravenalas which look similar (and called Traveler's Palms)... neither are palms, by the way... they are more closely related to bananas.
