Brightstar,

I'm not a food scientist, but I was concerned and curious to know more about fermentation. I thought if I knew the fundamentals I could do a better job with fermenting recipes for our family's use. My research took some of the mystery out of the process, while fascinating me, too. I hope others receive benefit as well.

Bev, thanks for taking the mystery of it for me, too! Now I can approach my harvest abundance with an eye to how it can be preserved, rather than panic!
