I have not developed a taste for chickory as a beverage, but then I no longer drink coffee either. At the most a drank 3 or 4 cups a day and most of the time 1 cup lasted me all day. Jack & I doctored ours up like you do yours after I discovered I could make homemade versions of GM's Internation coffees.

Wild chickory is one of my favorite wild flowers. I have yet to succeed in getting a bed of it started. It grows up and down our driveway so I get to see a lot of it.

Dutchlady, in truth it was a poor substitute, but only because it was the only thing available sometimes, but it is a delightful addiction. A little harsh, so you must develope a taste for it.

And leaflady, even if you don't like it, isn't it the prettiest little flower? I love the plant too.

I've always loved chicory (and Queen Anne's Lace) and a couple other things. I have tactile memories of these plants from my childhood, like honeysuckle, and it is such a shock to learn that they are all from elsewhere!

Lots of plants were brought by the Europeans, and have been here so long that we accept them without question. Doesn't matter to me, really, they have been here longer than I have!
And will probably be here long after I am gone, ya know?

I've been pulling chicory up all season at the end of my melon patch down the road a quarter mile when the ground is soft! At the end of a nearby cornfield these plants were super huge a couple years ago. They don't grow much further down the road as grandpa was a vigulant weeder when it came to wild carrot, chicory, jimson, velvetleaf mustard, and a few others!

Thanks, Indy...sorry chicory has taken over your garden space! If it had been my grandpa he probably would have dug those long roots up, dried them and then ground them up to drink!
