I just cleared out the pepper garden, as a hard freeze is due tomorrow... I have a clothes hamper sized tupperware container full of red/green/mixed chiles. By chiles I mean 90% cayenne/kung pao varieties that I don;t want to lose. and 10% volunteer peppers that I know what to do with. I want to dry the peppers and make flakes, but can I also dry the immature chiles and add them to the mixture? I have never tried to dry green chiles, just the ripe ones. I have dried lot's of peppers before, but is it ok to dry green ones?
