This year I was in the middle. I bought a local, free range, pasture raised broad breasted white turkey. It was processed the same day I bought it (Tuesday) and I brined it Wednesday night. It was FANTASTIC if I do say so myself:) I bought it from a local farm (http://www.jehovahjirehfarm.com) and saw the turkey's over the summer when I went to buy chickens from them. The crowd I was feeding wanted white meat and it was my first time cooking a bird for them, having cooked a Bronze turkey a couple of years ago I knew there would not be enough white meat.

I hope everyone's Turkey Day was happy!

Today will bring either turkey pot pie or a la king.

Kim, I thought the free-range white turkeys were not the BBW, but probably the Beltsville White? Whatever you had, I hope mine is as good. It's in the oven right now since we are celebrating today rather than yesterday like most folks.
