I have often wondered if this same sort of overbreeding or inbreeding or whatever it's called also applies to chickens. When I was a kid, circa 35 years ago, I loved chicken. It was my favorite food. Now I think it is pretty bland. Maybe it's just different cooking methods, but I think it's got to be more than that. I think chickens have changed. Anyone have any thoughts on that?
Kelli, I agree. The free-range local chickens from the farmer's market have considerable taste. Mind you, I'm not talking the so-called "free-range" chickens that merely have a crowded pen rather than a cage... I mean REAL free-range where they forage all day and come into the chicken house at night to roost.
I haven't looked at any meat chickens (yet) classified as endangered so I cannot answer that part.
Kelli, There's most definitely a difference! The free-range organic chickens that are locally grown and processed around here are the very best tasting chicken we've ever eaten. They were more expensive, but worth every bit. They were much cleaner than any supermarket chicken, too!!
