I am trying to expand my knowledge and use of herbs and spices for cooking and we visited the Penzey's store in Dallas. It was so helpful. Wonderful article on cinnamon. Thanks for the chili recipe. The aleppo chili is a new chili for me, also.

Heya! I'm glad you got a chance to go to a Penzey's store... We recently had one open nearby enough that we can stop in on occasion. Penzey's introduced me to Aleppo pepper, and I like the extra tang of its flavor. Obviously, in the chili seasoning mix, you can substitute whatever combination of chiles appeals to you, although a good dose of Ancho is almost required. :-)
