My eggplant(blk beauty) produced 3 fruits only 4' diam and hard as a rock; skin has now gone from purple to yellow. My butternut squash has produced 2 fruits, 4" long and starting to turn from green to tan in color. Containers are 16" tall X 20" diam. I live on Maui at sea level. What am I doing wrong?

How often did you water the plants, how often and what type of fertilizer were you using?

I presume they are warming up sufficiently in your location, but heat and sun will bring them to harvest quicker. Make sure they get plenty of reflected heat which should be easy to do if they are in containers.

Eggplants seem to like additional mulch mounded over the roots every so often. Like to be fed a lot too. Mine seem to flush with flowers after I give them the cheapo HI fertiliser...10:30:10
