Actually, will they have all these ingredients at the store or would I have to go to a specialized shop? This applies mainly to the specific chili powders you mention.
You can substitute any dried or ground chiles you may have on hand... The ancho is a must, I think, for genuine chili flavor, and if you have only cayenne on hand don't put in the same total amount since it's a bit hotter than some of the others. Similarly, you don't need the epazote, and if you only have greek or italian oregano on hand you can sub it for the mexican.
