Regarding scraps, my wife and I generate a pound or so of coffee grounds, egg shells
onion skins every seven days. I place it in a big plastic pot,(2'h 2'diameter) mixed with the leaves I collect around our concrete yard every other day. Once is ready, I rotate the soils from my plant collection putting this composted material at the bottom of the pot.
