Thank you for your article; this explains why the turkeys we cooked when I was a kid tasted better but took much longer to cook. I did have the opportunity to cook and eat wild turkey and there is no store bought bird that can compare in flavor. These were moist and all dark meat; I am not a white meat fan; and reminded me much more of the turkey of my childhood than the ones we get now. Since reading your article I am going to try and find somebody who raises one of the Heritage breeds you named or maybe even try raising some if I can find a supplier.

Good for you! I loved mine, will not buy a caged, broad-breasted white turkey ever again.
