Very informative. Handy for me, as I just had five pound bags of carrots at the store very cheap recently and "thought" they'd store a long time--now I "know" they will.
Thank you! This was a very educational article for me as well - I've pickled and canned some stuff before, but haven't done much else to store my veggies. I'm also going to pass this information on to our local food pantry to whom we donate food from the city's community veggie garden.
