Hi! My coffea arabica plants are having a nice growth spurt right now and one of them looks like it might benefit from a bigger pot.

Should I repot now or wait for the growth spurt to end or slow down? I'm afraid I'll disturb the plant and interrupt it's nice growth if I repot now!

You could be right. I think I would wait as long as the plant is doing great.

I'd tend to leave it alone as well but it really depends on how rootbound it is--if the plant is really rootbound then it's best to repot even if it does slow down the growth. But if it's still got a little room to breathe then you can leave it for now.

Repotting is appropriate whenever the plant is so rootbound its development is hampered.
