Those recipes look delish! I was gathering up leaves for iced tea last summer and had another thought occur to me as well: KYC mint would also work well for Mojitos!
Here's the recipe I used
2 oz club soda
add to several mint leaves muddled with 2 oz fresh squeezed lime juice and a teapsoon finely granulated sugar or sugar syrup. Garnish with a sprig of mint.
