Carolyn22's Journal: Sour Cream Meatloaf in a Crust

Initial Notes:

2lbs of ground beef not the one with the most fat content but not the one with the leasr, Mid range is fine.
Brown ground beef until cooked and crumbly.

Add one half of a carton of the small sour cream.
Add one package of shredded swiss cheese or a lb of really good sharp swiss cheese shredded.
Add salt and pepper to taste
add about a half cupof chopped parlsey leaves (use fresh, the dried stuff loses its essence too fast when dried).

Mix together and mound up on top of one sheet of pie crust. Add the other pie crust on top and seal the edges.

Mix on beaten egg with some milk (make it runny) and brush on pie crust
Make some decorations or holes in the top (your choice) or just holes

Place on a cookie sheet with sides or if you don't have one, use a regular cookie sheet but put a piece of foil on the rack below the one the cookie sheet is on because it may leak.


Cook at 350 for 1/2 to 45 mins until the crust is nice and browned.

Let sit a few minutes and cut a pie shaped piece and put a dollop of sour cream on it.
