Low-Fat Lemon Cheesecake

1 c graham cracker crumbs
2 tbsp. Margarine (melted)
2 cups No Fat cottage cheese
1 8-ounce package No Fat cream cheese
¼ cup flour
4 egg whites
1 cup sugar
1 tbsp lemon juice
1 tbsp lemon rind
¾ cup white flour
¼ cup sugar
1 tsp lemon zest
1 tbsp. Oil
1 tbsp. Butter
1 tbsp. Lemon juice
Instructions:Combine the graham cracker crumbs with margarine and press into the bottom of a spring form pan. Chill the crust in the refrigerator while you prepare the filling. In a food processor puree the cottage cheese and cream cheese. Add the flour, egg whites, sugar, lemon juice, and lemon zest. Pour over graham cracker crust and bake at 325º for 45 minutes.
TOPPING – Combine ingredients for topping while the cheesecake bakes
Sprinkle the topping on top of cheesecake and return to the oven for an additional 45 minutes.
Extra Notes:If you like cheesecake this is really yummy and you’d never know it was low-fat.
