Dave's Garden Cookbook: SPICY GRAINY MUSTARD

1/3 cup yellow mustard seeds
1 Tbsp brown mustard seeds
cup dry mustard powder
cup cold water
1 cup apple cider vinegar
2 Tbsp brown sugar
1 small clove garlic minced
tsp ground cinnamon
tsp ground allspice
tsp dill seed
tsp dried tarragon, crumbled
1/8 tsp ground cloves


In a medium bowl, stir together the yellow mustard seeds, brown mustard seeds, mustard powder and water. Let soak for 3 hours. In a small stainless steel pan, combine the vinegar, brown sugar, garlic, herbs and spices. Bring to a boil over medium heat. Simmer for 10 to 15 mins or until the mixture is reduced by half. Pour through a strainer into the mustard mixture. Transfer the mixture to the top of a double boiler. Cook for 10 mins, or until thickened. Remove from the heat and allow to cool. Pour the cooled mixture into a glass jar or airtight container. Refrigerate for 3 days before serving. Makes cup.
