Easy Apricot Jam

1 lb. dried apricots
2 1/2 c. orange juice
3/4 c. sugar
1/2 tsp. cinnamon
1/4 tsp. ginger
1 Tbsp. lemon juice

In a large kettle, combine apricots, orange juice, and sugar. Cover and simmer for 30 minutes. Mix in lemon juice, cinnamon, and ginger. Remove from heat and cool to room temperature. Puree in blender until smooth. Spoon into jars, leaving 1/2 inch space. Top with lids. Refrigerate. Makes 4 pints.
