The 2001 Dave's Garden Cookbook

Pineapple zucchini

1 Gal. zucchini chunks
3c sugar
1 1/2 c lemon juice
1 46 oz can unsweetened pineapple juice

Mix all together and simmer for 20 minutes
Pour in to hot jars and seal. (I think it was Go Vols that did this using the water bath treatment like you would peaches. I just boil the mixture and pour into hot jars and put the lids on that I have boiled so they are hot too.)
Use in recipes as you would pineapple
