Holiday Icebox Fruit Cake

1 lb. box of graham crackers, crushed|
2 cups pecans, chopped
1 cup walnuts, chopped
1 lb. box of raisins
1 8oz. jar of red cherries, sliced
I stick of butter or margerine
30 large marshmallows
1 can sweetened condensed milk (Eagle Brand)
Mix together in a large bowl the first 5 ingredients.|
In a saucepan or double boiler, heat the butter, marshmallows, and condensed milk slowly until the marshmallows melt.
Quickly pour this mixture over the graham cracker, nuts, raisins and cherry mixture and stir until all ingredients are moist.
Press this final mixture into a pan which has been lined with plastic wrap. Any shaped pan will do. I like to use a small angel food cake pan.
Refrigerate overnight and remove from pan onto a decorative serving dish.
Cover and keep refrigerated.
Growing up, this was my most favorite dessert for the holidays. Very different from the baked fruit cakes with the candied fruit. Moist and chewy with all the nuts...gone in a flash! No 'lasting quality' in my house!
