1 lb. red beets
4 Tbsp. vinegar
4 Tbsp. water
1/2 tsp. sugar
2 tsp. caraway seeds
1 small onion, chopped
1 tsp. ground cloves
1 bay leaf
salt and pepper
3 to 4 Tbsp. olive oil
Instructions
Scrubs beets; cook in salted water until tender. Dip in cold water; peel and slice thinly. Combine remaining ingredients. Pour marinade over beets; let soak for several hours.
