Bread Pudding With Lemon Sauce

2 c. evaporated milk
2 c. water
3 c. stale bread, broken in pieces
3 eggs
1/2 c. sugar
1/4 tsp. nutmeg
1 Tbsp. vanilla
4 Tbsp. melted butter
Lemon Sauce (recipe to follow)

Heat oven to 350 degrees. Butter 1 1/2 qt. casserole. Place milk in double boiler, cover, heat until tiny bubbles form around edges of milk. Remove from heat and put in bread; set aside.

Beat eggs; add sugar, salt (pinch), nutmeg, vanilla and butter. Mix well. Slowly stir in bread and hot milk mixture. Pour into casserole, set casserole in a pan of hot water up to 1 inch from top of casserole. Bake in 350 degree oven for 75 minutes or until knife inserted in middle, comes out clean. Seve with warm Lemon Sauce.

  Extra Notes  

1/2 c. granulated sugar
3 Tbsp. cornstarch
1/4 tsp. salt
2 c. boiling water
1/4 c. butter
3 Tbsp. lemon juice
Dash of nutmeg

Combine first 3 ingredients in saucepan, slowly add boiling wter and stir constantly to avoid lumping. Simmer about 5 minutes, remove and stir in rest of ingredients. Keep hot in double boiler until ready to serve on pudding.
