Rite’s Zucchini Bread

1-cup vegetable oil
3 eggs beaten
2 teaspoons vanilla
3 cups flour
1-cup brown sugar
1 cup granulated sugar
1-teaspoon soda
1-teaspoon baking soda
1-teaspoon salt
3 teaspoons cinnamon
½ teaspoon pumpkin pie spice
½ cup chopped walnuts
2 cups grated zucchini
(Omit salt and baking soda if using self-rising flour)

Grease and flour pans. Mix oil and eggs, mix in sugar, Combine dry ingredients and add to mixture. Add zucchini and nuts (or raisins). Mix thoroughly. Bake at 350 degrees for 1 hour. Makes 2 large or 3 small loaves.
