3 lbs. small red potatoes
1/4 cup olive oil
6 cloves of garlic, minced
2 Tbsp. dried rosrmary, crushed
1 tsp. salt
1/4 tsp. black pepper
Pierce each potato with a fork. Rub the potatoes in olive oil.
Place in a lightly greased 13"x9" baking pan and sprinkle with minced garlic, rosemary, salt and pepper.
Toss well to coat all the potatoes.
Bake at 400° for 45-50 minutes or until tender.
*White potatoes, quartered, are also great in this recipe.
