Oatmeal Cake

  Ingredients  
1-1/2 C. boiling WATER
1 C. Quick OATS
(pour water over oats and let stand 20 minutes)

Cream together:
1/2 C. MARGARINE
1 C. BROWN SUGAR (packed)
1 C. WHITE SUGAR
1 tsp VANILLA
2 EGGS (beaten)
1-1/3 C. FLOUR
1 tsp. (scant) SALT
1 tsp. (rounded) BAKING SODA

Topping:

1/2 stick MARGARINE or BUTTER
1 C. BROWN SUGAR (packed)
1/4 C. MILK

  Instructions  
cream together margarine, sugars, vanilla and eggs. Add oats. Sift together dry ingredients and add to mixture. Pour into a square baking dish (lightly greased), and bake at 350-375 or 35 minutes.

Topping:
mix all ingredients in a sauce pan. Bring to a boil for 2 or 3 minutes. Pour over cake while both are still hot. Sprinkle top with coconut (optional).

  Extra Notes  
A good cake to take to a "pot-luck" Easy to transport.
