Scalloped Corn Pudding

  Ingredients  
6 strips, crisp, crumbled bacon
3 Tbsp. Flour
1/4 tsp. paprika
1/4 tsp. dry mustard
Pinch of cayenne pepper
3 Tbsp. butter
1 small green pepper, chopped fine
1/2 onion, chopped fine
1 c. evaporated milk
2 c. fresh, or drained canned corn
1 egg, slightly beaten
2/3 c. buttered bread crumbs

  Instructions  
Preheat oven to 400 degrees. Generoulsy butter a 1 1/2 qt. baking dish. Mix flour, salt, parika, mustard, and cayenne pepper together and set aside. Melt butter in skillet; add green pepper and onion and cook until tender. Stir in the flour mixture and cook, stirring and smoothing for 2-3 minutes. Add milk; stirring constantly, and bring it to a boiling point. Stir in the corn, bacon and egg. Pour into baking dish and sprinkle with buttered bread crumbs. Bake for 25 minutes until the crumbs are brown.
