Dave's Garden Cookbook: Korean Chicken and Cashews

Coocking Time: 11 minutes
Yield: 4 servings
1 lb. boneless chicken breasts. sliced thin
3 Tbsp. oil
2 cloves minced garlic
2 Tbsp. soy sauce
1 Tbsp. sherry
1 Tbsp. cornstarch
1/4 tsp. ginger
1 med. green pepper, cut in small chunks
1/2 c. cashews halves
In oblong dish heat oil 3 minutes on high. Meanwhile, combine chicken, garlic, soy sauce, sherry, cornstarch, and ginger.
Add to dish and heat 4 minutes, stirring twice. Add green pepper and cashews and heat, covered 3 1/2 minutes until chicken and green pepper are tender, stirring once. Let stand 3 minutes before serving.
