The 2001 Dave's Garden Cookbook

Old-Fashioned Homemade Noodles

By GrannyLois

Category: Pasta

  Ingredients
1 egg
1 T. milk

pinch of salt

1/2 c. flour (or more)

  Instructions
Beat the egg with the milk.
Add the salt.
Add the flour. Mix. Add more if needed to make it kneadable.
Knead. Roll out thin on floured board or countertop.
Dry about 10 minutes.
Cut into strips. Cut into whatever lengths you choose.
Hang to dry, if desired.
Boil a few minutes.
Serve with salt, pepper, butter, parsley or sprinkle with parmesan cheese.
Or add to your homemade soup, which is what I do.

  Extra Notes
I got this recipe from Heritage Days in Madison, Wisconsin, in 1969 and have used it off and on ever since.
