Dorset Apple Cake

8 oz self raising flower
pinch of salt
4oz margerine
4oz castor sugar
3oz sultanas
8oz chopped apples
2 eggs
juice and rind of half a lemon


Sieve together the flour and the salt. Rub in the fat. Add the sugar,eggs,lemon, sultanas and chopped apples. Cook for 90 minutes at 180 C,350 F, gas mark 4. Delicious served hot with cream, or can be eaten cold.

This is a traditional Dorset recipe.Enjoy.
