Thai Style Prawns

500 gr. prawns, shelled (tails intact) and de-veined
1/2 bunch coriander chopped , leaves and stalk
2 Tbsp. teriyaki or soy sauce
1 lime, juice
2 slices of lime rind
2 tsp. sugar
1 tsp copped chilli
60 gr. butter, chopped
100 gr. snow peas, trimmed and blanched
4 shallot, sliced

Place prawns in alarge bowl with coriander, teriyaki, lime, sugar, chilli and butter. Mix together well to coat. Allow prawns to marinate for at least 30 minutes.
Heat a wok or frying pan until very hot. Toss in prawns and marinade. Stir-fry for 2 - 3 minutes or until prawns change colour. Serve on a bed of snow peas. Garnish with shallots.

  Extra Notes  
Serves 4.
Can be served with rice , crusty bread or steamed potatoes.
