Dave's Garden Cookbook: SAUCES FOR PASTA : Pesto

3 Bunches fresh basil
2 Tbsp. pinenuts
1 tbsp oil
2 cloves garlic
salt , pepper
1/4 cup oil
3 Tbsp. grated parmesan cheese

Wash basil, use only leaves ( you will need plenty basil: abouts 2 cups of leaves).
Place the pinenuts and the Tbsp. of oil in a small saucepan, cook over small heat until pinenuts are golden brown, drain immediately.
Put basil leaves, pinenuts, garlic, salt and pepper in food processor, fitted with metal blade. Process until finely chopped and smooth, with the machine going add the extra oil in a thin stream. Process for 1 more minute.
Place basil mixture in a bowl, add the parmesan cheese , mix until combine.

  Extra Notes  
.- Spoon the sauces over any favourite pasta..........The name of the dish will be as per the name of the pasta and the sauce use.
.- Serves 4 - 6.
.- Serve with hot steaming pasta
.- A blender can be used, you need to stop blender on ocassion and scrape mix down.
.- Pesto can be frozen. If freezing, do not add the cheese; add it when Pesto is thawed and you're ready to eat.
