Wash basil, use only leaves ( you will need plenty basil: abouts 2 cups of leaves). |
Place the pinenuts and the Tbsp. of oil in a small saucepan, cook over small heat until pinenuts are golden brown, drain immediately.
Put basil leaves, pinenuts, garlic, salt and pepper in food processor, fitted with metal blade. Process until finely chopped and smooth, with the machine going add the extra oil in a thin stream. Process for 1 more minute.
Place basil mixture in a bowl, add the parmesan cheese , mix until combine.
