Apricot Bundt Cake

2 cups self-rising flour
2 cups sugar
1 cup melted butter or oil
3 eggs at room temperature
2 jars apricot baby food, Junior Size
1 tsp. lemon extract
1 tsp. vanilla
1 tsp. salt

Combine dry ingrediants. Combine we ingrediants. in separate bowl. Mix ingrediants of both bowls together. Grease and flour bundt pan and bake at 325 degrees approximately 1 hour.
There are 2 possible glazes for this cake:
1). Mix 1-1/4 cup confectioner's sugar with 1/4 cup lemon juice and 1 tsp. vanilla until smooth.
2). Boil together 1/2 cup honey, 1/4 cup lemon juice and 1 tablespoon butter.
Drizzle one of those glazes over the cake.

  Extra Notes  
A "half-back" friend from Florida gave me this recipe. She used her own lemons for the glaze that she had just picked out of a tree in her front yard. A "half-back" is a yankee who has become a snowbird in the winters and finally settled for halfway back, in the mountains of NC.
