Nancy Willis' Spanish Round Steak

Cajun Seasoning
4 pcs. cubed steak, cut into 2" strips
1 can tomatoes
1 small can tomato paste
1 cup chopped onions
1 TBSP. brown sugar
1 chopped bell pepper
1/4 cup sliced olives
2 TBSP. Olive juice
1/2 TBSP. beef bouillion granules
1/4 cup sherry (optional)

Sprinkle the cubed steak with the cajun seasoning and quickly brown in 2 tsp. olive oil. Add on top, bell peppers, onion and olives. Mix sugar and bouillion and pour on top. (If you use the sherry, eliminate the sugar). Mix tomatoes and paste and pour on top. Sprinkle the olive juice over all. Simmer until the beef is tender and the sauce thickened.
Variations: you may add mushroom or capers

My best friend gave me this recipe. She comes from Mississippi and I accuse her of being a Cajun gal, which she strongly denies. Thanks, Nancy.
