This is a Weight Watchers recipe with a few changes.....
1 TBSP. & 1 tsp. butter
2 TBSP. minced onion
3 cups chicken broth
1-1/3 cups potato flakes
2 cups evaporated skimmed milk
12 Oz. drained, canned salmon, flaked
3 TBSP. chives
1/8 tsp. white pepper
Instructions
In a large saucepot, melt the butter; saute onions. Add the chicken broth, and bring back to a boil. Gradually add potato flakes. Simmer, and then add remaining ingredients and heat until just before boiling. Makes 4 servings.
Extra Notes
During my other lifelong career (trying to losing weight) this was the best low-fat recipe I ever tried. It is now considered a special treat at my house. Again, this recipe is great with garlic bread (use a spray butter substitute).
