Dave's Garden Cookbook: Salmon Patties

The 2001 Dave's Garden Cookbook

Salmon Patties

15 oz. Can of red or pink salmon, drained
1 T Fresh lemon juice
1 t Prepared mustard
2 Eggs, lightly beaten
12 Saltine crackers, crushed
1/4 t Ground pepper
2 t Fresh parsley, chopped (optional)
1/4 C Vegetable oil

Mash drained salmon in a bowl. Add lemon juice, mustard, eggs, cracker crumbs, pepper, and parsley (if desired). Mix gently. Shape into six 1/2-inch thick patties. Heat oil in skillet over medium heat. Fry patties on one side until golden brown, then gently turn and fry other side. Serves 4 to 6, depending upon appetites.
