Dave's Garden Cookbook: Pork-n-Bean Bread

2 cups sugar|
1 cup vegetable oil
16-ounce can pork-n-beans
2 cups flour
1 teaspoon cinnamon
1/2 teaspoon soda
1/2 teaspoon baking powder
1 teaspoon vanilla
1 cup chopped nuts
1 cup raisins,plumped
Heat oven to 325 degrees. In a mixing bowl,|
beat sugar,oil,eggs and beans with electric
mixer until mixture is smooth,(about 3 minutes).
Stir in flour,cinnamon,soda and baking powder
until combined. Stir in vanilla,raisins and nuts.
Pour into two greased and floured 9 x 4 inch
loaf pans. Bake at 325 degrees for 50 to 60
minutes or until tests done with a toothpick.
Cool in pans 5 minutes. remove from pans and cool
completely on wire racks.Makes two loafs.
Note: to plump raisins;cover with boiling water|
for 30 minutes and drain.
Bread may be baked in 5 greased and floured
16-ounce cans. Fill cans 2/3 full with
batter and bake as directed.
Decorate each can with a bandanna for the
spirit of the old west.
